We were on vacation and arrived at our hotel later in the evening and we wanted to find a place to eat that would be quick and reasonably priced. Jilbertito's popped up on an google search and we decided to give them a try. We were hoping that coming in late wouldn't affect the quality of our meal. We ordered the chicken enchiladas. We got our meal in about 5 minutes and they looked great, so I was hoping that if it looks good, surely it will taste good. Absolutely the best chicken enchiladas I have ever had!! The seasoned chicken was so good and the sauce was excellent. If we lived in Glenwood Springs, we would defintely dine here often.

First time to Jilbertito's and was happy with the plates we ordered. Tried the carne asada and a couple tacos and the food was of high quality. Really liked how their street style tacos are much larger than what you usually get at other places and the open salsa bar with their pickled carrots and peppers which are always a great addition to your meal.
Had the #5 (enchilada, taco, beans and rice) combo. Liked it so much that we ordered a second one. Quick, friendly service. The portion sizes are more than enough. Clean restaurant too.
If you're rolling either way on I-70 you owe yourself a stop @ Jilbertito's. This place is the real deal: awesome food, *huge* portions. It's a little culinary trip south of the border; give it a visit & you'll be *very* happy. Also, _superb_ trailer parking just across the street. (campers, boats, semis :) )
